Mixed Vegetable Pickles

THE INGREDIENTS:
2 cups green cabbage, cut into 1-inch squares
3 teaspoons salt
1/2 cup sugar
1 cup white wine vinegar
2 large carrots, peeled, cut into 2-inch wedges, lengthwise
2 cucumbers, peeled, cut into 2-inch wedges, lengthwise
In a small, deep bowl, mix 1 teaspoon of salt with the
cabbage by rubbing the salt in. Let the cabbage sit for 5 minutes, then
rinse the salt off with cold water. Drain the cabbage in a colander. The
same procedure should be followed with the carrots and cucumbers. In a
large bowl, mix the cabbage, carrots, vinegar, sugar, and cucumbers.
Refrigerate the pickles before serving and serve the pickles with
Vietnamese Barbecued Chicken.
