Preserved Pork Head Meat (Due Dau Heo)

THE INGREDIENTS:
1 pound pig's head meat
1 cup water
2 cloves garlic, crushed
1 medium red chili, seeded and sliced
1 teaspoon whole black peppercorns
1 tablespoon peeled and sliced ginger root
1 clove garlic, finely sliced
1/4 cup cilantro leaves
2 teaspoons baking soda
2 cups white vinegar
2 tablespoons sugar
1 tablespoon salt
1 chili flower for garnish
Clean the pork in water with baking soda until it's
really clean. Boil it in lightly salted water until thoroughly cooked.
When cool, cut into 1-1/4 inch pieces and rinse with cold water. Combine
sugar, salt and vinegar and bring it to boil, then remove it from heat
and allow it to cool.
Place the pork in a jar, add chili, crushed garlic, ginger and
peppercorns. Cover the jar with liquid and seal it. Let set for a few
hours.
When the pork is white and crunchy (you should taste to determine when
the tewture is right), and a little bit sweet and sour, it is ready to
eat. Finely slice the meat, add garlic and toss well in a bowl. Garnish
with cilantro leaves and red chili shreds.
