Pork Sausage (Cha Lua)

THE INGREDIENTS:
1 pound pork loin 8 ounces meat from small pig's head 2 cups salted
water
1/4 cup cooking oil
5 shallots, diced
2 cloves garlic, crushed
1/2 cup wood ear mushrooms, finely chopped
3 tablespoons whole black
peppercorns
1/4 cup sesame seeds, toasted
2 eggs, beaten
1 large banana leaf
3 tablespoons fish sauce
2 limes, cut into wedges
Boil the pork and the pig's head in salted water for 20
minutes, drain and de-bone and cut into small cubes. Heat the oil in a
large frying pan, cook shallots and garlic until both are soft. Add the
pork, mushrooms and peppercorns. Cook, stirring until mushrooms are
soft; finish with sesame seeds. Remove from heat and stir the eggs
through the pork mixture.
Place the mixture on the banana leaf, wrap it and tie it with a string.
Steam the banana leaf for 2 hours (above boiling water). Unwrap and
slice it thinly. Serve pork sausage with fish sauce and lime wedges.
