Tomato Sauce (Sot Ca Chua)

THE INGREDIENTS:
1 tablespoon vegetable oil
1 teaspoon
sugar
3 cloves garlic which are finely chopped
3 medium
tomatoes which are seeded and peeled and finely chopped
1 cup chicken stock or fresh coconut juice with a pinch of salt
Heat the oil and sauted garlic until it's slightly browned. Add the tomatoes, stir for 5 minutes, adding coconut juice (or the chicken stock). Bring the combination to a boil and then add a small amount of water. Mix all thoroughly, reduce heat and then season to taste with salt and sugar. Simmer until reduced by one-third or until desired thickness is achieved.
